What you need: 300 g Lean sirloin or flank steak, 1 medium Yellow onion (thin sliced), 1 medium Green or red bell pepper (thin sliced), 2 cloves Garlic cloves (minced), 2 slices Provolone slices, 2 rolls Whole-grain sub rolls (60g each), 1 tsp Olive oil, 1 tsp Worcestershire sauce, 0.5 tsp Smoked paprika, 1 tsp Salt and black pepper.
How it comes together: Slice the steak as thinly as possible against the grain. Freezing it for 20 minutes first makes this much easier. Heat the olive oil in a large non-stick or cast iron pan over medium-high heat. Add the onion and pepper, sprinkle with salt, and cook 5-6 minutes until softened and lightly caramelized. Push the veg to one side. Add the steak in a single layer to the other side of the pan. Sear 60 seconds without stirring, then start breaking it up and tossing with the veg.
