What you need: 250 g Large shrimp, peeled and deveined, 120 g Rice noodles (flat, pad thai style), 2 large Eggs, 1 cup Bean sprouts, 3 stalks Green onions, sliced, 2 cloves Garlic, minced, 2 tbsp Crushed peanuts, 0.25 cup Fresh cilantro, 1 piece Lime, cut into wedges, 2 tbsp Tamarind paste, 1.5 tbsp Fish sauce, 1 tbsp Low-sodium soy sauce.
How it comes together: Cook rice noodles according to package directions. Drain, rinse with cold water, and set aside. Mix tamarind paste, fish sauce, soy sauce, and sriracha in a small bowl. Set the sauce aside. Heat a large pan or wok over high heat with cooking spray. Cook shrimp for 2 minutes per side until pink and curled. Remove and set aside.
