What you need: 1.5 cup Frozen shelled edamame, 3 tbsp Tahini, 1 small Lemon, 1 small Garlic clove, 2 tbsp Extra-virgin olive oil, 0.5 tsp Cumin, 0.5 tsp Sea salt, 3 tbsp Cold water, 1 small Whole-grain pita, 0.5 cup Baby carrots, 0.5 cup English cucumber, 0.5 cup Cherry tomatoes.
How it comes together: Thaw the frozen edamame: dump it into a colander and run warm water over it for 60-90 seconds until no longer icy. Shake dry. Reserve a tablespoon of edamame for garnish. Add the rest plus tahini, lemon juice, garlic, olive oil, cumin, and salt to a food processor or high-powered blender. Blend, scraping down the sides, while drizzling in cold water 1 tablespoon at a time until you hit a creamy, dippable consistency. Should take 60-90 seconds total.
