What you need: 0.5 cup Rolled oats, 0.5 cup Low-fat cottage cheese, 2 large Whole eggs, 1 scoop Vanilla protein powder, 1 tsp Baking powder, 0.5 tsp Cinnamon, 0.5 tsp Vanilla extract, 1 pinch Sea salt, 2 tbsp Unsweetened almond milk, 1 tsp Butter or coconut oil, 1 serving Fresh blueberries + banana + maple drizzle.
How it comes together: Add oats, cottage cheese, eggs, protein powder, baking powder, cinnamon, vanilla, and salt to a blender. Blend 20-30 seconds until smooth. The batter should be thick but pourable -- if it's too thick, add a tablespoon of almond milk and pulse. Heat a non-stick pan over medium-low heat and add butter or coconut oil. Medium-low is the move. High heat burns the outside before the middle cooks.
