What you need: 2 medium Sweet potatoes, 0.75 cup Dry curd cottage cheese, 1 cup Black beans or chickpeas, 0.5 cup Salsa, 2 stalks Green onion, 2 tbsp Cilantro, 0.5 piece Lime, 0.5 medium Avocado, 1 tsp Hot sauce (optional), 1 cup Optional cooked chicken or ground turkey.

How it comes together: Bake the sweet potatoes at 400°F (205°C) for 40-50 minutes, until tender. (Or microwave 8-10 minutes for speed.) Warm the beans or chickpeas in a small pan or microwave. If using chicken or turkey, warm that too. Split each sweet potato open and fluff the inside with a fork.
