What you need: 115 g Linguine or protein linguine, 280 g Chicken breast, 115 g Low-fat (2%) cottage cheese, 50 g Pecorino romano, finely grated, 22 g Smoked bacon, 2 cloves Garlic, minced, 1 tsp Garlic parmesan seasoning, 0.5 tsp Black pepper, freshly cracked, 1 tbsp Salt, 1 tsp Cooking spray, 2 tbsp Fresh parsley, chopped.
How it comes together: Bring a large pot of water to a boil and add 1 tbsp salt. Drop in the pasta and cook to al dente per package instructions. While the pasta cooks, pound the chicken breast to about 1/4 inch thickness. Season both sides generously with salt, pepper, and the garlic parmesan seasoning. Heat a non-stick pan over medium-high heat with cooking spray. Cook the chicken 4-5 minutes per side until golden and cooked through. Set aside to rest.
