What you need: 550 g Sirloin steak, sliced thin against the grain, 240 g Egg noodles or pappardelle, 300 g Chestnut mushrooms, sliced, 200 g Plain 2% Greek yogurt, 250 ml Beef stock, 1 medium Onion, sliced, 3 cloves Garlic, minced, 1 tbsp Dijon mustard, 2 tsp Worcestershire sauce, 2 tsp Cornstarch, 1 tbsp Olive oil, 2 tbsp Fresh parsley, chopped.
How it comes together: Put the noodles on to boil in well salted water and cook to the packet time. Pat the beef dry and season it. Heat the oil in a wide pan over high heat and sear the beef in two batches, 90 seconds a side, then move it to a plate. Add the mushrooms to the same pan and cook for 6 to 7 minutes without stirring much, until the water has cooked off and they are properly browned. Add the onion and garlic for the last 3 minutes.
