What you need: 500 g Lean stewing beef, 3 Dried guajillo chilis, 1 Dried ancho chili, 1 medium Onion, quartered, 4 Garlic cloves, 200 g Canned diced tomatoes, 500 ml Beef broth, 1 tsp Ground cumin, 1 tsp Dried oregano, 0.25 tsp Ground cloves, 0.25 tsp Ground cinnamon, 1 tbsp Apple cider vinegar.
How it comes together: Toast the dried chilis in a dry pan over medium heat for 2-3 minutes until fragrant and slightly softened. Place them in a bowl and cover with boiling water. Soak for 15 minutes. Drain the chilis and add them to a blender with onion, garlic, diced tomatoes, cumin, oregano, cloves, cinnamon, vinegar, and salt. Blend until smooth. Season the beef chunks with salt and pepper. In a Dutch oven or heavy pot, sear the beef on all sides over high heat, about 3 minutes total.
