What you need: 700 g Extra lean ground beef, 250 g Lasagna sheets, 500 g Low fat cottage cheese, 1 large Egg, 150 g Part-skim mozzarella, shredded, 40 g Parmesan, grated, 800 g Crushed tomatoes, 2 tbsp Tomato paste, 1 medium Onion, diced, 4 cloves Garlic, minced, 2 tsp Dried oregano, 1 tsp Dried basil.
How it comes together: Heat the olive oil in a large pan over high heat and brown the beef in two batches, 4 to 5 minutes each, leaving it alone long enough to colour. Lower the heat, add the onion and garlic and cook for 5 minutes, then stir in the tomato paste, oregano and basil and cook for another minute. Add the crushed tomatoes, season, and simmer uncovered for 25 minutes until the ragu is thick enough to hold a line when you drag a spoon through it.
