What you need: 160 g Elbow macaroni or small shells, 200 g Low-fat cottage cheese, 50 g Sharp cheddar, shredded, 0.25 cup Unsweetened almond milk, 1 tsp Dijon mustard, 0.5 tsp Garlic powder, 0.25 tsp Onion powder, 0.25 tsp Smoked paprika, 1 pinch Salt and black pepper, 2 tbsp Panko breadcrumbs, 1 spray Cooking spray.

How it comes together: Boil the pasta in well-salted water until just al dente, a minute short of the package time. Scoop out a mugful of the cooking water before draining. While the pasta cooks, blend the cottage cheese, almond milk, Dijon, garlic powder, onion powder, smoked paprika, salt and pepper until completely smooth, at least 45 seconds. Return the drained pasta to the warm pot over low heat and pour in the blended sauce. Stir to coat.
