What you need: 2 pieces Russet potatoes, 250 g Cooked chicken breast, shredded, 60 g Buffalo hot sauce, 100 g Plain 0% Greek yogurt, 40 g Light shredded cheddar, 1 stalk Celery, finely diced, 2 pieces Green onion, sliced, 0.5 tsp Dried dill, 0.5 tsp Garlic powder, 0.25 tsp Onion powder, 1 tsp Coarse salt, 1 pinch Black pepper.
How it comes together: Heat the oven to 200C (400F). Scrub the potatoes, dry them completely, prick each one several times with a fork, and rub the skins with the coarse salt. Bake directly on the oven rack for 50 to 60 minutes, until a knife slides into the centre with no resistance. While they bake, make the yogurt ranch: stir the Greek yogurt with the dill, garlic powder, onion powder, a pinch of salt and pepper. Thin with a teaspoon of water if you want it drizzleable.
