What you need: 280 g Boneless skinless chicken breast, 4 slices Centre-cut bacon, 2 slices Sharp cheddar slices, 2 rolls Whole-grain sub rolls (60g each), 1 cup Romaine lettuce, 1 medium Roma tomato (sliced), 4 thin slices Red onion (thin sliced), 1 spray Olive oil spray, 0.5 tsp Garlic powder, 0.5 tsp Smoked paprika, 1 tsp Salt and pepper, 0.5 cup Plain non-fat greek yogurt.
How it comes together: Make the ranch first: whisk greek yogurt, light mayo, dill, chives, garlic powder, onion powder, lemon juice, and a pinch of salt and pepper. Refrigerate while you cook. Slice the chicken breasts horizontally to make 4 thin cutlets. Season both sides with garlic powder, smoked paprika, salt, and pepper. Heat a non-stick pan or grill pan over medium-high. Spray with olive oil. Cook chicken cutlets 3 minutes per side until just cooked through (165°F internal). Rest 2 minutes.
